Bruut by Bruno Timperman - Bruges, Belgium


Bruut is well worth the 4 hours door to door from London on the Eurostar to Bruges. This is a charming 20 cover restaurant in the heart of the Old Town. The food is made using seasonal, locally sourced ingredients and the methods are technical and innovative with an asian fusion influence. Favourite dishes include: sea bass and buttermilk tartare with kohlrabi, wakami dust, purslane, pickled shallots served with a dry German Riesling. The goat’s cheese, candied beetroot, dill and salmon roe amuse bouche was an amazing start to it all!

The Front of House was run by one eccentric man with many talents; Mixologist, Maitre D’, Sommelier, Waiter and Therapist!
